I really would like to be able to stay at home with my daughter rather than sending her to daycare all the time and as a single mother need to be making a decent income. Is it hard to find a legit job opening in this field? Also I’m planning on going back to school in January (I’ve already applied for everything and been accepted) and am studying to be a medical office assistant.

Most transcription companies want you to have 2 years experience before working from home. So you may have to first work in a doctor’s office or hospital after being trained. I worked from home for 13 years as a MT and it was great.
The website below has a lot of information about MT like how to choose a course, jobs, etc. Not affiliated with any school or program, just good info.
All of the "work at home/online" etc are all scams; you will get answers from some of them. Contact some Doctors offices or hospitals near you to see if they have any legit openings like that
